Many fruit smells are not reproduced through an essential oil of the fruit, but through combinations of aroma chemicals, lactones, esters and bases. The fruity family therefore includes both highly recognisable materials and molecules that provide only one part of the overall effect.

How to build a fruity accord

Lactones traditionally known as ALDEHYDE C14 and C18 can create peach, coconut and creamy effects; other materials work on pear, apple, melon or juicy facets. Bases allow you to start from a pre-built fruity structure and modify it with green, floral, citrus or gourmand components.
