A gourmand accord is not necessarily simply “sweet”. It can be toasted, milky, alcoholic, spicy, balsamic or fruity. Its credibility often depends on the contrast between sugary components and drier woody, spicy or musky materials.

How to build a gourmand accord

VANILLIN and ETHYL VANILLIN build vanilla directions with different levels of intensity; ETHYL MALTOL works on candyfloss and caramel; COUMARIN introduces hay, tonka and powdery sweetness. Lactones and rum, whisky or cognac bases can add creaminess and liqueur-like facets.
