CHOCOLATE TRUFFLE BASE

CHOCOLATE TRUFFLE BASE is a gourmand base built around an effect of dark chocolate, cocoa and cream. It is useful when an already rounded and complete chocolate signature is needed, with greater depth than a simple combination of cocoa and vanilla.

Olfactory profile

Chocolatey, creamy, gourmand and slightly bitter, with nuances of cocoa powder, melted chocolate, cream, hazelnut, vanilla and light caramel.

In formula

It is particularly useful in gourmand, vanilla, coffee, hazelnut, coconut, sweet tobacco and amber compositions. It can add volume to the heart and base, create a readable dessert effect and introduce creaminess into structures that feel too dry.

With VANILLIN or ETHYL VANILLIN it increases sweetness; with coffee it becomes more roasted; with hazelnut it develops a praline character; with tobacco and woods it takes on a darker and more sophisticated direction.

BASE or chocolate accord built from scratch?

The base offers an already balanced effect of cocoa, cream and sweetness. An accord built from individual molecules instead allows separate control over bitter cocoa, milk, vanilla, hazelnut and roasting. The two approaches can be combined.

When to choose it

It is particularly suitable when a creamy, enveloping and immediately readable chocolate note is needed, or when a gourmand heart needs to be built quickly without starting from scratch.
