ETHYL MALTOL
ETHYL MALTOL is a crystalline gourmand raw material with an intensely sweet, caramelized and sugary character. It is one of the most effective materials for building cotton-candy, caramel, candied-fruit and high-impact gourmand sweetness effects.
Olfactory profile
Sweet, caramelized and fruity, with nuances of cotton candy, cooked strawberry, syrupy peach, caramel and a light toasted facet.
In formula
It is particularly useful in gourmand, fruity, vanilla, praline, caramel and red-fruit accords. In small amounts it can increase the perception of sweetness and ripeness; as the dosage increases, the cotton-candy/caramel signature quickly becomes dominant.
With VANILLIN or ETHYL VANILLIN it builds a creamier sweetness; with red fruits it increases jammy and candied effects; with cocoa and coffee it can amplify the toasted-gourmand facet; with BENZOIN it makes the base more balsamic and rounded.
How to work with it
It is a very powerful crystalline material and is best evaluated in dilution. An excess can flatten the formula into uniform sweetness and mask more delicate nuances.
When to choose it
It is particularly suitable when an intense and recognizable gourmand sweetness is needed, more caramelized and cotton-candy-like than VANILLIN.
