This name refers to the essential oil obtained from the peel of the orange Citrus sinensis (L.) For many years, this was laborious manual work for workers in Sicily and Calabria, who extracted the oil from clay jars in dimly lit rooms, because light spoils the oil. Then came special machines, in which ripe oranges rolled over perforated horizontal rotating discs covered with numerous vertical needles. These needles pierced the containers of essential oil in the peel, and the oil flowed through the holes in the disc into a container. In Spain, the oil was obtained by pressing the orange peels in hydraulic presses.\u003cbr\u003e\n\u003cbr\u003e \nNowadays, especially in the United States and Brazil, essential oil production is combined with orange juice, which is gradually replacing tea, milk, and other traditional beverages in the West. In large, mechanized plants, oranges are crushed and the resulting pulp is sent to centrifuges that separate the solids and divide the liquid emulsion into clear orange juice and essential oil. This oil is of inferior quality to that obtained using traditional methods, but the use of this technology is unavoidable due to the enormous production volumes of orange juice and essential oil.\u003cbr\u003e\n\u003cbr\u003e\n Global sweet orange essential oil production currently reaches 15,000 tons per year, equivalent to over 3,500,000 tons of fresh oranges, as the oil yield is 0.3-0.6% of the fruit weight.\u003cbr\u003e\n\u003cbr\u003e \nThe chemical composition of sweet orange oil is typical of all citrus fruits. The most significant factors that influence the oil's odor and flavor are:\u003cbr\u003e\n\u003cbr\u003e\n the presence of 88-97% (+)-limonene, especially in this optical form, since (-)-limonene has an odor with notes of turpentine, eucalyptus, mint;\u003cbr\u003e\n the presence of about 3% of various aldehydes — citral (0.1-0.2%), citronellal (0.1%) and C8—C12 fatty aldehydes (up to 2.8% in total);\u003cbr\u003e\n the presence of microimpurities of 2,4-decadienal (0.03%), alpha-synensal (0.03%) and nutcatone (0.01%), which have very low olfactory thresholds and therefore significantly influence the odor of the entire mixture.\u003cbr\u003e\n Orange oil should be stored at a temperature no higher than +8°C, away from light and air, since at higher temperatures and light, (+)-limonene can convert to (-)-limonene.
